Sweet Beetroot Hummus

minutesHummus is such a popular dip, and while there are a few options in the supermarket, there’s nothing like home made!
Sweet Beetroot Relish gives a fresh, sweetness to the hummus, whilst the Flavour Dust delivers a gentle warmth and great flavour. Serve your hummus on charcuterie boards, or in burgers and sandwiches, and it’s great with vege sticks!.
If you don’t have tahini, feel free to swap it out with Greek yoghurt or sour cream. Sesame oil works too, just replace the oil in the recipe with water.
Ingredients
400gm can of chickpeas, drained
1/2t cumin
1 1/2T lemon juice
1 1/2T oil
2T tahini
Salt and pepper to taste
3-4 small ice cubes (optional)
Directions
- Add the chickpeas to a blitzing bowl or food processor bowl
- Add the other ingredients, and lastly the ice cubes if you choose to use them
- Blend until smooth, scraping the sides of the blitzing bowl or food processor at least once, before blending again
- If the hummus is too thick and not blending well, add a little water a teaspoon at a time until the desired consistency is reached
- Place in a bowl and cover. Refrigerate for an hour minimum to allow the flavours to develop
- Garnish with a tablespoon of Sweet Beetroot Relish and a crack of fresh pepper, just before serving
Notes
- Tip! We've used ice cubes in this recipe. Why? Because they help to make a smoother hummus! You can omit them if you wish, and it won't affect the flavour of the recipe.
